Easy Baked Honey Chicken and Broccoli

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 16 ounces baby red potatoes, halved
  • 4 chicken breasts, tenderized
  • 1 fresh head broccoli

Directions

  1. Preheat oven to 400 degrees F.
  2. In a small bowl, combine olive oil, honey, brown sugar, Dijon, garlic, oregano, basil, parsley, salt and pepper.
  3. In a large sheet pan, place potatoes and chicken. Spread seasoning mixture, from step #2, on top of each chicken breast.
  4. Place sheet pan in oven and cook uncovered for 20 minutes.
  5. Rise broccoli and cut florets off the head of the broccoli.
  6. Add broccoli and cook dish for an additional 15 minutes or until chicken reaches an internal temperature of 165 degrees F.
